10-minutes Quick Sambal Ikan Bilis

When you are in a rush or simply being lazy, the best option when eating at home other than instant noodles would be to whip up a quick meal. This dish goes well with plain white rice and maybe a quick sunny side-up with light soya sauce. For this dish, only FOUR ingredients are necessary with an optional one.

Ingredients:

100g of dried anchovies or ikan bilis
One whole tomato (cut into quarters or smaller)
One big onion (cut into rings)
Chilli sauce
Turmeric (optional)
Oil, salt and pepper (I do not count these in as most houses probably will have them)

1) Heat up some oil (1-2 tbsp) and fry up the fried anchovies to ensure their crispiness. Remove from heat.
2) Using the leftover oil, brown the onions before putting in the fried anchovies.
3) Pour about 5 tablespoons of chilli sauce (you can add more if you like it slightly wetter) over it before adding a pinch of turmeric, salt and pepper.
4) Add in the tomatoes and stir until thoroughly mixed. Remove from heat.
