Who says cooking a home-made meal have to be hard and take hours? This is another easy recipe I whipped up with quite excellent result if I do say so myself.
Ingredients
3 heaping tbsp of marmalade
2 tsp salt
2 tsp black pepper powder
2 chicken drumsticks
5 cloves of garlic (sliced)
2 tsp dried rosemary
1) Marinate the chicken with all the above ingredients for 2 hours or overnight except the garlic. Insert the marinade in between the skin and the flesh of the chicken too to get the flavours all in!
2) Using a few spoonfuls of oil, heat it up and put in the chicken. Lower the heat upon putting them in. Turn until all the sides are browned.
3) Pop the chicken into the microwave for 3 minutes on high heat or full power.
4) Reduce the oil on pan to about 1 tbsp and brown the garlic (or you can use shallots if you like) and put in the leftover marinade. Add about 200ml water and heat up until it simmers. Pop in the chicken again and bathe the chicken occasionally with the sauce. Cook until sauce reduced to a thick liquid form.
